1 package (8oz) chickpea pasta, cooked according to package instructions
1 tsp olive oil
3 turkey sausage (I used spicy red pepper), meat removed from casing
⅓ cup prepared fresh salsa (spice preference is your choice)
Zest and juice of 2 limes
⅓ cup cilantro leaves, chopped
1 tsp salt
Directions
Boil water for pasta and cook the pasta according to package directions.
Heat oil in a skillet on medium high heat and add the turkey sausage; cook for 10 minutes until the meat is cooked through. By this time the pasta should be ready.
Add the pasta, salsa, lime zest + pulp and cilantro leaves and season to taste.
Combine and serve hot.
