Preheat the oven to 350°F and set the oven rack to the lowest shelf.
Meanwhile, in a small saucepan, combine butter and sage leaves. Transfer the saucepan to the stovetop and bring to a simmer over medium heat, stirring occasionally. Cook for 5 minutes, then remove from heat. Discard sage leaves.
Add the honey, white wine vinegar, apple cider and cinnamon to the sage butter. Whisk and transfer back to the stovetop. Simmer for 15 minutes, or until the mixture starts to thicken.
Add 2 cups of water to the bottom of the roasting pan.
Place the turkey in the roasting pan. Pour half of the apple honey glaze onto the turkey. Season with salt and pepper.
Transfer the turkey to the oven, basting every 60 minutes with additional apple honey glaze mixture until it reaches an internal temperature of 170°F.
Add an additional 1-2 cups of water to the bottom of the roasting pan halfway through cooking.
Remove the turkey from the oven and tent the turkey loosely with foil. Allow to rest for 20-30 minutes.
Carve the turkey and serve. Enjoy!
