  1. Heat oil in a large pan over medium-high heat.
  2. Place the turkey in the pan, season generously with salt and pepper, and cover.
  3. Cook for about 10 minutes, flip and continue to cook until the turkey reaches 165 F (74C) and the juices run clear. Remove from heat and cover.
  4. Prepare the bowl: place a handful or so of greens in two large soup bowls.
  5. Top with quinoa and beans, about ½ cup (125 mL) per bowl, tomatoes, peppers, and onions.
  6. Slice up the turkey as desired, and add to the bowls. Scoop some of the avocado dressing over top, and serve with one or two lime wedges.
