3lb sweet potatoes, steamed until very soft and mashed
3 yolks
1/2 cup whipping cream
1 cup gouda, grated
1 tsp salt
1 tsp pepper
1/2 tsp nutmeg
Directions
In a mixing bowl, combine the mashed sweet potatoes, yolks, cream, gouda, salt, pepper, and nutmeg. Whisk well to combine until very smooth. Transfer to a piping bag fitted with a large tip.
Pipe the duchess sweet potato mixture into your baking dish artfully.
Bake at 375 degrees for 25-30 minutes.
Remove and garnish with fresh chives.
