  1. In a mixing bowl, combine the mashed sweet potatoes, yolks, cream, gouda, salt, pepper, and nutmeg.  Whisk well to combine until very smooth.  Transfer to a piping bag fitted with a large tip.
  2. Pipe the duchess sweet potato mixture into your baking dish artfully.
  3. Bake at 375 degrees for 25-30 minutes.
  4. Remove and garnish with fresh chives.
