1 medium red bell pepper cut into bite-sized chunks
8 bamboo skewers, soaked in water for no less than 30 minutes
1 cup (250 mL) fresh pineapple juice
1 clove garlic, finely chopped
1 Tbsp (15 mL) soy sauce
1 tsp (5 mL) grated fresh ginger
1 Tbsp (15 mL) liquid honey
1/4 tsp (1 mL) salt
pepper to taste
TIP: Use sausage and turkey breast pieces for a different taste or just turkey breast pieces if preferred.
Heat BBQ grill to 400ºF (205ºC) and cook whole sausages for 6 minutes, or 3 minutes per side.
Set aside and prepare remaining ingredients.
Cut sausages into bite-sized chunks and thread onto skewers, alternating with peppers, scallions and pineapple chunks.
Return to grill and brush with glaze until pineapple and vegetables have grill marks and sausages are cooked through – approximately 4 minutes per side.
Suggested Canadian Brewery Pairings
Selected by Thirst for Knowledge Inc.
Hawaiian Pale Ale
Spearhead Brewery Hawaiian Style Pale Ale
Remember the old adage if it grows together, it goes together? That is the rationale for this pairing. Both meal and beer are going to bring tropical fruity notes, however, the hops from this pale ale will mellow out the fresh ginger.
