TIP: This recipe is portioned for a whole turkey. You should half this recipe if using 1-3 turkey cuts, such as a breast, thigh or drumstick.
- Combine all ingredients and mix well. Let sit for 30 minutes for flavours to mix.
- Coat either a whole turkey or turkey cuts with rub.
- Roast or barbecue turkey until a digital thermometer read 170°F (77°C) in the thickest part of the meat away from any bones.
- Let turkey rest (cover with a loose tent of foil) in a warm place for 15-20 minutes before carving.
