TIP: Pairs well with a fresh baguette or crackers for a filling meal.
- In a large saucepan, combine turkey carcass with 6 cups of water. Add carrots, celery and onion and let simmer for at least 1 hour. Best results if you let it simmer for a few hours on low until all the meat is falling off the bones.
- Strain liquid and reserve. Pick out any meat remaining after it cools and reserve.
- Pour broth into pot and add turkey meat, additional carrot, onion, celery and potatoes. Let simmer on low for an hour, and serve.
