1 cup (250 mL) cooked turkey meat (from breast or leg), small dice
2 Tbsp (30 mL) Sriracha sauce (or regular hot sauce)
1 Tbsp (15 mL) honey
1 Tbsp (15 mL) melted butter
6 large eggs
¼ cup (60 mL) 2% milk
¼ cup (60 mL) crumbled blue cheese
2 Tbsp (30 mL) scallions plus more for garnish, diced thin
Salt and pepper to taste
Directions
Preheat oven to 375oF (190oC).
In a small bowl, mix the turkey meat with the Sriracha, honey and melted butter.
In another bowl, whisk the 6 eggs and milk until combined. Pour the egg mixture into a lightly oiled mini-muffin tin, filling each section three-quarters full. There may be extra egg mixture, save it for scrambled eggs or make a second batch of quichettes.
Divide the turkey mixture evenly among the muffin tins.
Top with 2 Tbsp (30 mL) of the blue cheese and all the scallions.
Sprinkle with salt and pepper and pop in the oven for 20-25 minutes or until golden brown. They shouldn't jiggle if you shake the pan.
Remove from the oven and top with the remaining blue cheese and a few sprinkles of scallions.
