  1. Combine lentils, vegetables and herbs in a heavy saucepan. Cover with at least 1” (2.5 cm) water.
  2. Bring to a boil, reduce heat and simmer uncovered for 15-20 minutes until lentils are tender, but not mushy. Drain and remove bay leaf.
  3. Fold in turkey.
  4. Combine olive oil, turkey stock, lemon juice, celery and parsley.
  5. Pour dressing on salad and toss to mix.
