  1. In a large skillet with a lid, sauté sausage, leeks, carrots and celery over medium heat in oil until lightly browned.
  2. Reduce heat to low and add rice, water and vinegar. Cover and simmer for 10 minutes.
  3. Stir once and then simmer for an additional 10 minutes.
  4. Remove from heat, stir, then cover and let sit for 5 more minutes before serving.
