1 ½ cups cooked turkey breast sliced into ½ inch cubes
4 Tbsp of Worcestershire sauce
3 Tbsp of soya sauce
1 Tbsp of scotch bonne pepper sauce (to taste)
2 Tbsp mild curry-1/4 tsp of cinnamon
1/4 tsp of nutmeg
1⁄2 tsp sea salt, divided
1⁄4 tsp black pepper
3 Tbsp extra virgin olive oil
1⁄2 cup white onion, chopped
1 Tbsp of butter
1/2 cup celery, cut into ¼ inch pieces
-1 cup of green beans, cut into ½ inch pieces
1 cup cooked brown rice
1/2 cup canned kidney beans
1 cup kale, chopped
1/2 cup spinach chopped
1 cup bell peppers (red, yellow or orange), cut into ¼ inch cubes
Directions
Precook 1 cup of brown rice in a rice cooker and let sit.
Mix turkey, Worcestershire sauce, soya sauce, scotch bonnet pepper sauce, curry, cinnamon, nutmeg, salt and pepper into a bowl.
Add extra virgin olive oil to a large frying pan and heat on medium-high along with onions and butter. Once heated, add turkey and mixed contents. Stir often. Cook for approximately 8 minutes.
Add celery, green beans, cooked rice and kidney beans to the pan and stir contents. Turn heat to medium and cook for 5 minutes.
Add kale, spinach and bell peppers. Stir and cook for 5 minutes. Taste contents and add additional salt and pepper to your liking. Enjoy!
