1 ½ cups (375 mL) cups turkey breast meat, cooked and chopped
1 stalk celery, diced
½ cup (125 mL) red seedless grapes, sliced
2 Tbsp (30 mL) walnut pieces
2 Tbsp (30 mL) chopped red onion
½ cup (125 mL) light mayonnaise
1 tsp (5 mL) seedy Dijon mustard
1/4 tsp Salt
Pepper to taste
8 slices whole grain bread
4 leaves fresh lettuce
Substitute raisins or dried cranberries in place of grapes.
Directions
Combine turkey meat, celery, grapes, walnuts and red onion with mayonnaise and mustard.
Season with salt and pepper to taste.
Divide filling evenly between four slices of bread, top with lettuce and remaining bread. Cut and serve.
