  1. Take a piece of fresh pasta dough and roll it out until thin. Roll a second piece so that it is similar in size.
  2. Mound 3 tablespoons of stuffing onto the dough and flatten slightly. Repeat with additional stuffing, leaving 3” of space between mounds of stuffing, using the space available on your sheet of dough.
  3. Moisten the dough with a brush.
  4. Cover with the second sheet of dough. Be careful to remove any air pockets as you add your dough.
  5. Cut each ravioli using a 3” round cookie cutter.
  6. Repeat until stuffing and dough is used up.
  7. Cook your ravioli in boiling, salted water for 5 to 6 minutes if your ravioli is fresh and a little longer if they are frozen.
  8. Serve with your favourite sauce and a dollop of cranberry sauce.
