1 boneless, skinless turkey breast, cut into 1-inch cubes
1/2 cup (120 ml) chopped red pepper
1/2 cup (120 ml) chopped green pepper
1/2 cup (120 ml) chopped pineapple
1/2 cup (120 ml) grape tomatoes
1/2 cup (120 ml) chopped zucchini
1/2 cup (120 ml) red onion
1/2 cup (120 ml) cremini or white button mushrooms
barbecue sauce, optional
TIP: Get the kids involved with cooking! Separate each ingredient into individual bowls and let them decide what they want on their skewers by letting them pick their own ingredients. You can assemble and cook it for them. If you want to kick up the flavours a notch, you can marinate your turkey cubes in a simple citrus brine.
Directions
Soak wooden skewers in water for at least 20 minutes.
Preheat grill to medium-high.
Skewer ingredients along with turkey on prepared wooden skewers. Brush with BBQ sauce, if desired.
Reduce grill heat to medium and cook over direct heat for approximately 10 minutes, flipping once halfway. Turkey is fully cooked when the thickest part of the meat reached 165°F (74°C) using a digital meat thermometer.
