TIP: If you want to make this dish rich and hearty, switch the egg whites for 6-8 whole eggs
- Turn the oven on to 375°F.
- Mix egg whites and pesto together in a bowl and whisk to combine.
- Add in the turkey meat and sundried tomatoes and season with salt. Mix well.
- Spray a nonstick muffin tray, then fill the cups with the mixture.
- Top with grated Parmigiano-Reggiano cheese and bake (375°F) for 12-15 minutes or until the whites have set.
- Remove and enjoy while hot.
