  1. Sauté onions and celery in butter in large fry pan.
  2. Add turkey, apricots, ginger and broth.
  3. Bring to a boil, stir in rice and currants.
  4. Remove from heat, cover and let stand 5 minutes.
  5. Toss with parsley.
