Pour olive oil in a cooking pot and bring to medium heat.
Add onions, roughly cut. Once softened, add tomato paste and mix.
Gradually incorporate sausages cut in sections, bell peppers and jalapenos (seeded and cut), tomatoes (cut in cubes) and potatoes (cut in small wedges).
Mix well and add salt, black pepper, cumin powder, cilantro powder and harissa.
Pour one cup of water, cover and cook for about 25 minutes.
Break 4 eggs spaced apart, cover and let simmer for another 4 to 5 minutes.
Remove from heat, transfer in a large plate, garnish with fresh parsley, and serve with bread.
