Cook your roast for 2.5 hours, then remove and rest for 10 minutes.
Slice into 1" steaks. Cook on a medium/high grill for 4-5 minutes per side to achieve golden brown grill marks, then set aside.
While the turkey steaks rest, combine the shallot, parsley, cilantro, mint, oregano, red wine vinegar, olive oil, and garlic in a mixing bowl. Season with salt and pepper to taste.
Spoon on to the steaks and serve with grilled potatoes and salad.
