Serves : 4
  1. Preheat grill to medium heat; meanwhile, bring a large pot of salted water to a boil.
  2. When the water is boiling, cook pasta al dente according to package directions.
  3. While the pasta is cooking, season the turkey cutlets with salt, pepper, and dried oregano.
  4. Cook until golden brown and juices run clear, about 3-4 minutes on each side; remove from grill and cut into 1" (2 cm) strips.
  5. Before draining pasta, reserve 1/3 cup (75 mL) of the cooking water and set aside. Drain pasta, add the turkey slices, and set aside.
  6. In a medium bowl, mix tomatoes, mozzarella, basil, garlic, oil, vinegar, and oregano.
  7. Add to the pot with the pasta and turkey, and stir.
  8. Add arugula, and stir until combined; season with salt and pepper, if needed. Serve warm or cold.
